Ebbw Vale chef creates dish for celebrity chef Paul Rankin

A BLAENAU Gwent chef cooked up a treat for celebrity chef Paul Rankin
Amanda Sampson, of Ebbw Vale, joined three like-minded food lovers to take part in every aspiring chef's dream - to create a winning ‘Great Irish Menu’ dessert for Mr Rankin.
Mr Rankin was the first chef from Northern Ireland to be awarded a Michelin Star.
The four lucky winners from England, Scotland and Wales responded to an Irwin’s Bakery competition which ran in partnership with Tourism Ireland and appeared on almost one million packs of Rankin soda bread.
The competition asked fresh-thinking foodies to come up with a recipe featuring one of the Irwin’s Rankin Selection bread range as a key ingredient.
The four winning recipes were picked from thousands of suggestions and the budding chefs were flown to Belfast for a weekend break where they met Mr Rankin and watched him cook up their ‘Great Irish Menu’ at the Belfast Cookery School. Mrs Sampson's winning dish consisted of Rankin Selection fruit soda Bramley bruschetta with a cider and caramel sauce.
