ROAST GARLIC CHICKEN WITH LEMON AND BASIL
1 Large chicken (Jointed)
20 Basil Leaves
3 Cloves Garlic
Sea Salt, Black Pepper
Salad and new potatoes
Crush garlic and rub on chicken joints and squeeze lemon juice over them in oven dish.
Add olive oil and roast in oven dish about 200?c for half an hour.
Take out of oven, tear basil leaves and add some white wine and put back in oven for ten minutes until cooked.
Season with sea salt and black pepper.
Serve with salad and new potatoes.
Great summer dinner
