THE ENTERPRISE shown by former teacher Rhys Thomas in setting up his own business baking bread and cakes for people with food allergies will be welcome news for all Gwent people who suffer from the medical condition known as Coeliac Disease.

Patients with this condition have intolerance to gluten/wheat and require bread, cakes and biscuits which are free from gluten. Mr Thomas’s initiative will be a most useful local addition to their diet. The only treatment for the disease is a strict gluten free diet.

I have been a Coeliac for 27 years and Mr Thomas’s bread is the best I have ever eaten. For those who are newly diagnosed there is a local support group for south east Wales and they can be contacted by e-mailing Cardiff@coeliac.org.uk Incidentally, I am still using a chocolate cake recipe printed in the Argus more than 50 years ago in 1961.
