BOUND TO CRUMBLE!: This month's recipe is Gooseberry and Elderflower Crumble'.

Ingredients: 450g gooseberries, washed and topped and tailed. 1 tsp elderflower cordial concentrate, 65g sugar, 50g rolled oats, 100g fresh wholemeal breadcrumbs, 50g sunflower or olive oil margarine (suitable for baking).

Method: 1, preheat the oven to 180C/Gas Mark 5. 2, in a large bowl, mix together the gooseberries, elderflower cordial and 40g of the sugar. 3, arrange the gooseberry mixture in the base of a very lightly greased ovenproof dish. 4, mix together the oats, the breadcrumbs and the remaining sugar and then rub in the margarine until a crumble consistency is achieved.

Pour the crumble topping over the fruit and bake the pudding for 30-40 minutes until the topping is crisp and the fruit is soft.

This pudding serves 4 people and uses delicious seasonal flavours; a real taste of spring!

You can use fresh elderflowers as these bloom in May, but cordial is a much easier and safer way of achieving the flavour.

GO ON, PAMPER YOURSELF: Pamper days are held regularly throughout Blaenau Gwent as part of the Carers Project.

They are FREE for carers, but, if there are places available, non-carers can take part at a cost of £1.

The next Pamper Day takes place in Tredegar on May 10.
