Simona has been stationed here for 15 years and is our Chef of the Month for April. Voice caught up with the extremely busy chef to tell us what’s on the menu for spring.

V: People travel from all over South Wales and further afield to sample your food, even with the current roadworks on the nearby roundabouts, why do you think that is?
S: Consistency. People know exactly what they’re going to get – high-quality and great-tasting food at a very reasonable price.

V: Your dishes are so good, you were once recognised for your hard work and skill by being voted as Chef of the Year, who or what inspires your cooking?
S: Fresh seasonal ingredients.

V: You now change the menu on a monthly basis instead of seasonally, what’s the reason behind this?
S:We want to give our diners something more. We believe a month is the perfect amount of time to try the dishes available, then the following month, they get to try something new. Variety is the spice of life as they say.

V: Tell us more about the new lunch menu that you’ve introduced, and what dishes can people expect to see on it?
S: Our new lunchtime menu is priced at £11.95 for one-course, £14.95 for two-courses and three-courses for £16.95, which is available on Wednesday to Saturday from noon until 2pm. Main options include Escalope of Seatrout served on a bed of crushed new potatoes, sun dried tomatoes and soft herb oil and Beef Stir-fry vegetables with ginger, garlic, chilli and a soy sauce.

V:What else is new?
S: Due to popular demand, we are now open all day Wednesday to Saturday from 12pm and will be offering afternoon tea from noon until 4pm Wednesday to Saturday (bookings with pre-orders only).
Also, we’re now serving Sunday lunch from noon until 4pm each week, where diners can enjoy live music performed by a wide variety of different artists each week.
