White chocolate and basil mousse strawberry salsa
Ingredients
• 350g white chocolate
• 6 large eggs, separated
• 3 basil leaves chopped finely
• 25g caster sugar
Method
1. Place the chocolate in a bowl and melt in a microwave or over a pan of simmering water.
2. Add the milk and stir to combine. Cool slightly.
3. Whisk the egg whites in a clean bowl until they form soft peaks. Add a tbsp of the egg whites to the chocolate and quickly combine to slacken the mixture.
Carefully fold the remaining whites and basil into the chocolate mixture.
4. Spoon the chocolate mixture into bowls and chill for at least two hours until set.
5. To serve place some diced strawberries in the middle of the bowl and garnish with berries.
